  • 1 large cucumber (diced)
  • 1 cup sweet grape tomatoes or cherry tomatoes (halved)
  • 1 can black beans (drained, rinsed)
  • 1/4 cup chopped red onion
  • 1 medium green bell pepper (seeded, finely chopped)
  • 1 medium jalapeño pepper (seeded, minced, optional)
  • 1/4 cup chopped, fresh cilantro leaves
  • 1 medium lime (zested, juiced)
  • 2 teaspoons cider vinegar
  • 1 tablespoon canola oil
  • 1/4 teaspoon black pepper

  1. In medium bowl, combine cucumber, tomatoes, beans, onion, peppers, cilantro, lime zest and juice, vinegar, canola oil and pepper.
