  • 2 fresh avocados (pitted, peeled, cubed)
  • 1 medium English cucumber, chopped (about 1 1/4 cup)
  • 2 tablespoons dill (chopped)
  • 1/4 teaspoon garlic powder
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley (chopped)
  • 1/4 teaspoon Black pepper
  • 6 medium tomatoes (cut into wedges)

  1. For the dressing: In a small bowl, whisk together the lemon juice, olive oil, garlic powder, and black pepper.
  2. In a large bowl, combine the avocado, tomatoes, cucumber, fresh dill and fresh parsley.
  3. Pour the dressing over the salad and toss to coat. Serve immediately.

Tip: Note: Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
