Picnic Cole Slaw

Perfect for a picnic or potluck, this colorful veggie will have guests asking for more.

Ingredients

Servings  10  

  • 8 ounces packaged coleslaw mix
  • 1 cup matchstick-size carrot strips
  • 1 medium green bell pepper (chopped)
  • 1/2 cup finely chopped onion
  • 6 medium radishes (thinly sliced, halved)
  • 1/4 cup vinegar
  • 3 Tbsp. sugar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

  1. In a large bowl, gently toss together all the ingredients. Cover with plastic wrap and refrigerate for 15 minutes to 1 hour for peak flavor and texture.

Cooking Tip: To prepare ahead of time, put the coleslaw mix, carrot strips, bell pepper, onion, and radishes in a large bowl. Cover it with plastic wrap and refrigerate for up to 24 hours. Toss together with the remaining ingredients (vinegar, sugar, salt, and pepper) 15 minutes before serving.

Tip: The serving amount is 1/2 cup.
