Mango and Pineapple Tropical Parfaits

Dig down deep so you’ll capture the ripe fruit, silky yogurt, and crunchy granola in every spoonful of this paradisiacal parfait. Ruby-red pomegranate “jewels” and lacy coconut top off this island treasure.

Ingredients

Servings  4   Serving Size   1 parfait

  • 1 medium mango (peeled, chopped)
  • 2 cups nonfat, plain Greek yogurt
  • 1/2 cup low-fat, no-sugar-added granola
  • 1/2 cup diced pineapple
  • 1 medium banana (sliced)
  • 1/4 cup pomegranate seeds, or arils
  • 2 tablespoons unsweetened, flaked coconut

Directions

  1. In each parfait glass, layer the ingredients as follows: 1/4 of the mango, 1/4 cup yogurt, 1 tablespoon granola, 2 tablespoons pineapple, 1/4 of the banana slices, and 1/4 cup yogurt.
  2. Top with the remaining granola.
  3. Sprinkle with the pomegranate seeds and coconut.
